Hi -

Skyline to the Sea is net downhill with really on one or two climbs (that I remember). Santa Cruz has a few more climbs and a really fun stream crossing - usually up to mid-thigh! I do not recommend taking off your shoes - they dry quickly and - at least on the way out - there is a really steep climb to squeeze all the water out!
