I love that so many of you enjoyed these during the race. I warn you that these are very addictive and can go fast once you make them so sign up for at least 4 races ahead of time. Enjoy! ~Miki
1/2 cup salted dry-roasted peanuts 1/2 cup raisins, craisins or other dried fruit 1/2 cup roasted sunflower seed kernels 2 cups raw oatmeal, quick or old fashioned 2 cups toasted rice cereal, such as Rice Crispies 1/2 cup peanut butter, crunchy or creamy 1/2 cup packed brown sugar 1/2 cup brown rice syrup 1 tsp vanilla
1. In a large bowl, mix together the peanuts, raisins, sunflowers seed kernels, oatmeal and toasted rice cereal. Set aside.
2. In a medium microwaveable bowl, combine the peanut butter, brown sugar, and rice syrup. Microwave on high for 2 minutes. Add vanilla and stir until blended.
3. Pour the peanut butter mixture over the dry ingredients and stir until coated
4. Sthingy it into an oiled 9" x 13" pan. Press down firmly. (It helps to coat your fingers with margarine, oil, or cooking spray)
5. That's it! Let it sit for a while to harden, cut, and good luck. ;D
((I usually find myself adding a little more rice syrup to make it stick together better.))

I will be at Redwood Park, but I wasn't planning on making any. Maybe I should? I was suggesting that the calories would need to be worked off after eating the whole batch. And for some strange reason on point #4, the word "Sthingy" kept on being translated to "Sthingy". Maybe the message board engine knows something I don't?

Okay, weird. The word that doesn't seem to translate is the opposite of 'fork'.

Oh, man - if one of you makes these AND we have some of Pat's goodies at Redwood Park, I'm gonna have to get back out for another long run right away!! Seriously, these are the best energy bars I've ever had!! Thanks for sharing the recipe, Miki!! Sarah
